FATTENED LIVER PRODUCTS

We make a variety of premium liver products from fattened liver of duck and goose, using only 100% first class fresh ingredients. So, these are not merely pâtés or other spreads containing small quantities of liver. In terms of use, it is best to treat them as ready-made whole duck or goose liver products. From a consumption point of view, these liver products are best suited to the highest quality markets – e.g. France and Belgium. Their unique recipe is completely our own and their seasoning contains typical Hungarian elements. Our basic flavors are “Nature” (Original) – with a little spice, Tokaji (sweet Tokaj wine and acacia honey) and Truffle savory (Tuber melanosporum truffle/black truffle).

CONSUMPTION

We recommend serving the liver cooled and sliced. ​Carefully help it out of the jar or plastic mold, and slice with a knife dipped in warm water. In the kitchen, of course, foam, cream, mousse, or fillings and toppings, etc. can be made from the liver. We do not usually use strong seasonings and spices during serving: Tokaji and Truffle flavors alone are sufficient. What we strongly recommend with them is fresh, crisp bread (or for the Tokaji: a scone or brioche) – and a glass of wine.

BLOCKS AND ENTIER-S FROM DUCK AND GOOSE LIVER

Block and Entier – we make these two types of products in different flavors and pack sizes.
Entier: whole liver pieces marinated, molded
Block: Peeled liver seasoned, molded, and cooled
Both types of products are based on 100% fresh first-class duck and goose liver (except for a small quantity of spices).

RETAIL AND HORECA (GASTRONOMIC) PREPARATIONS

We have made glass jar (canned) products specifically for retail purposes, i.e. for shops and supermarkets that sell directly to consumers. Canned products are preserved by careful heat treatment to retain their quality at room temperature for a long time (before opening). Of course, for those who want to consume the product soon after purchase, we recommend our “terrine-form” products, as they are better priced and closer to fresh liver than canned goods. We also recommend “fresh” preparations for gastronomic use. Blocks in one-kg packs are cost-optimized solutions.
